Fried Eggs |
| When a fresh egg is cracked into a
skillet, the thickest part of the egg white clings around the yolk. To
ensure that the whites set throughout, break these thick albumen sacs,
and distribute the whites evenly. Melt a teaspoon of butter in a 7-inch nonstick skillet set over high heat. Crack two eggs into a bowl. 1.When the butter is melted, carefully slide eggs into skillet, holding bowl close to pan to avoid breaking yolks. 2. Reduce heat to medium. Using the side of a spatula, gently poke the egg-white sacs surrounding the yolks, tilting and swirling the skillet to distribute the whites. 3. Cook eggs until the whites are set, about 1 minute. 4. Turn off heat; let stand 1 minute. Serve immediately. 5. For eggs over easy, cook for 1 minute after breaking whites, then carefully turn eggs. Cook for 30 seconds on the other side.
