Blueberry Cake

  • ½ cup butter or margarine
  • 1 ½ cups brown sugar
  • 1 Golden Valley egg
  • 1-teaspoon baking soda
  • 1 ½ cups blueberries
  • 1-cup milk
  • 1-tablespoon vanilla
  • 2 cups flour


  • Beat butter or margarine.
    Add sugar, egg, vanilla, and milk. Mix well.
    Then add flour and baking soda.
    Gently fold in blueberries.
    Pour into a greased 9x13" pan.
    Top with streusel topping.

    Streusel Topping:

  • ½ cup brown sugar
  • 1-teaspoon cinnamon
  • 1-tablespoon margarine
  • ½ cups chopped nuts (optional)

  • Mix streusel toppings together and sprinkle over cake.
    Bake at 350 degrees for 35-40 minutes.

    Note: Blackberries or rhubarb can be substituted for blueberries. Use same amount. Same amount of sour cream or yogurt can be substituted for milk.
