Val's Pumpkin Cake

  • 1-cup oil
  • 2 cups white sugar
  • 4 Golden Valley eggs
  • 2 cups flour
  • 1-teaspoon baking soda
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1-teaspoon cloves
  • 2 cups canned pumpkin


  • Beat together sugar, oil and eggs.
    Mix together the dry ingredients.
    Add dry ingredients a bit at a time alternating with pumpkin to wet ingredients. Mix well.
    Pour into a greased 9x13" pan.
    Bake at 350 degrees fro 45 minutes.
    Ice with cream cheese icing.

    Cream Cheese Icing:

  • 4 ounces cream cheese
  • ½ cup margarine or butter
  • 2 cups icing sugar
  • 1-teaspoon vanilla


  • Beat icing ingredients together until smooth. Icing cake when cooled.
