Eggs Benedict

  • 4 English muffins (split)
  • 4 Golden Valley eggs, poached
  • 4 slices ham, fried

  • Toast muffins. Place ham on muffin halves.
    Top with poached egg. Cover with hollandaise sauce.


    Hollandaise Sauce

  • 3 Golden Valley eggs separated (use yolks only)
  • 2 drops Tabasco sauce
  • 1 tablespoon lemon juice
  • ½ cup melted butter
  • ½ teaspoon salt


  • Combine 3 egg yolks, lemon juice, salt and Tabasco sauce in the blender. Mix.
    Slowly pour in melted butter while blending at low speed.
    Pour over English muffins.
