Eggs Benedict

4 English muffins (split)
4 Golden Valley eggs, poached
4 slices ham, fried |
|
Toast muffins. Place ham on muffin halves.
Top with poached egg. Cover with hollandaise sauce.

Hollandaise Sauce
|
3 Golden Valley eggs separated (use yolks only)
2 drops Tabasco sauce
1 tablespoon lemon juice
½ cup melted butter
½ teaspoon salt

Combine 3 egg yolks, lemon juice, salt and Tabasco sauce in the blender. Mix.
Slowly pour in melted butter while blending at low speed.
Pour over English muffins.
