Cheddar Cornmeal Muffins

  • 2 cups flour
  • 1-cup cornmeal
  • 2 heaping teaspoons baking powder
  • 1-teaspoon salt
  • Pinch cayenne pepper
  • 1 ½ cups grated cheddar cheese
  • 2 cups milk
  • 2 Golden Valley eggs
  • ½ cup melted margarine


  • Combine dry ingredients.
    Mix together milk, eggs and melted margarine.
    Stir into dry ingredients.
    Mix just to moisten.
    Grease muffin pan.
    Fill with batter and sprinkle each with a little extra cheese.
    Bake at 375 degrees 15-20 minutes.
