Blueberry Bran Muffins

  • 3 cups buttermilk
  • 1 cup brown sugar
  • 1 cup white sugar
  • 3 Golden Valley eggs
  • 1 cup oil
  • 3 teaspoons baking powder
  • 2 teaspoons salt
  • 3 teaspoons baking soda
  • 1 teaspoon vanilla
  • 1 cup blueberries
  • 3 cups flour
  • 3 cups bran


  • Mix 3 cups buttermilk with 3 cups bran.
    Let stand 10 minutes.
    Beat eggs, oil and both sugars.
    Add baking soda, salt and vanilla. Mix flour with baking powder.
    Mix bran mixture with liquid mixture and quickly add the flour mixture by hand.
    Fold in blueberries.
    Bake at 350 degree for 25 minutes.
    Makes 4 dozen.
