Toad-In-A-Hole

Good Morning Casserole
  Cooking spray  
4 slices bread, crusts trimmed, cut into quarters 4
6 eggs 6
1 1/2 cups milk 375 mL
4 slices turkey bacon, diced and cooked 4
1/2 cup shredded fat-reduced Cheddar cheese, divided 125 mL
1/3 cup sliced white mushrooms 75 mL
1/4 tsp salt 1 mL
1/2 cup frozen hash brown potatoes, thawed 125 mL

Method:
Preheat oven to 350°F (180°C). Spray a 9x9x2 inch (23 x 23 x 5 cm) baking pan with cooking spray.

Arrange bread slices in pan, overlapping slightly; set aside.
Beat together eggs, milk, bacon and 1/4 cup (50 mL) cheese in a large bowl.

Add mushrooms and salt.

Pour mixture over bread slices. Sprinkle potatoes and remaining cheese over egg mixture.

Bake until lightly browned and knife inserted near centre comes out clean, about 35 minutes. Serve immediately
